Our Story
In 2014, I was in Glyfada, Athens sharing a gelato with my husband Con; the gelato was breathtaking and so I said to my husband, ‘why don’t we have this flavour in Sydney?’. Straight after Greece, we visited Italy where we learnt & perfected the art of making gelato.
That’s how it all started. We had a dream of bringing the flavours of the Aegean to Australia. We launched our baby, PAGOTO in 2015 in the suburb of Marrickville, a place where Hellenism thrived in Sydney. After being featured in various food publications and being labelled by one foodie Eloise Basuki from Concrete Playground as the ‘sweet taste of Hellenic Republic in the inner west Athens of Sydney’, our dream became a reality. We soon became a institution in the inner west followed by stores opening around the country including Melbourne and Cairns.
Who’s Fresko? We are formerly known as PAGOTO but due to someone replicating our business online, we thought it was time for a fresh scoop on our journey especially when we suddenly lost our online presence due to an error by the social media giants Facebook & Instagram, our following of over 10,000 authentic people was lost. In late 2019, we re-launched our much-loved shop to ‘FRESKO Gelato & Waffle House’. Fresko in Greek means ‘Fresh’ and that’s exactly what it was. Not only a fresh start but also paying homage to the freshness of our product, we take no shortcuts in any of the steps. All our ice cream and waffles are made on-site. But to clarify, we still own & can trade under the name of PAGOTO.
So what can you have at Fresko? Sorry I think the question was, what couldn’t you have at Fresko? We have created over 36 flavours inspired by our motherland and also the classic gelato flavours we enjoyed growing up. It doesn’t stop there; we also have a huge beverage list including our famous Baklava Frappe & Gelato Shakes, oh wait… I nearly forgot, we also have our delicious Waffles. See, I did it again… I forgot our Loukoumades also known as the Greek Balls, we make those too. Whatever you’re craving, there’s something fresh for you at Fresko.

Gelato
Our Gelato inspiration draws very much from our Greek heritage. You’ll find our gelato chef as whipped app interesting & uncommon Aegean flavoured gelato such as baklava, diples and kataifi are based on popular Greek pastries, all handmade with love and available most nights depending on popularity. One of our most popular & unique flavours is our watermelon and feta gelato.
We also have a whole heap of classic favourites such as cookies & cream, chocolate & caramel slice crunch that are also on our list of 36 flavours that all rotate daily.
For the vegans & those watching their sugar, we also have a variety of Vegan & Sugar Free flavours available daily. All made fresh with no shortcuts but with healthier alternatives such as stevia.

Waffles
Oh you hit my sweet spot-said one reviewer. Our fresh Waffles are ones to remember which you can laden with more deliciousness such as our Smash Pavlova or our classic Peanut Butter with Banana & Honey, there’s so many flavours to choose from, the choice is truly endless.
